Sunday Yummy
Cheesy Muffin Recipe

Cheesy Muffin Recipe

My favorite BBQ place here in Atlanta is Jim n' Nick's. While waiting on your food they bring over these yummy, cheesy muffins, that I was determined to find out how to make. I have found this recipe mimics them the closest.

Prep Time: 10 minutes
Cooking Time: 15 - 20 minutes
Ready in: 30 minutes
Difficulty Level: Low

Cheesy Muffin Recipe:

1½ cups - Flour
1 cup - White Sugar
1 cup - Shredded Cheddar Cheese
¾ cup - 2% Milk
1 - Egg (beaten)
4 tbsp. - Butter (softened)
1½ tsp. - Baking Powder
¼ tsp. - Vanilla
1 can - Pam spray or other non-stick pan grease

Preheat oven to 400°. Mix ingredients together and pour into a greased muffin pan.
Bake for 15 - 20 minutes.

I always add more cheese. I actually add about a cup and a half, instead of just a cup. If your muffins are smaller, make sure to watch them, as they will cook faster and burn. I also use whole milk, as I refuse to buy a whole thing of milk for ¾ of a cup.

Bon App├ętit!
